Deviled eggs are always welcome at pot lucks and anytime people are gathering. I am not the kind of person who has a "deviled egg plate." I know right? You'd think with my plate collection I would have several, but I'm not a big fan of single use items. I use red cabbage to keep the eggs in place on a regular plate. One of my pot luck tips is that I always have a few plates on hand that I've purchased at the local thrift store that I can leave behind. This saves me from losing a favorite plate or bowl and the host doesn't have to go to the extra trouble of returning my plate. Plus, I'm donating a couple of dollars to a charitable cause when I make my purchase!  I write a note on the back of the plate saying, "No need to return. Keep or Donate."

Curried Devil Egg Recipe

Ingredients

6 hard boiled eggs
1/4 cup mayonnaise
1 minced green onion
3 tsp of a good yellow curry powder
1/4 tsp of dry mustard or 1/2 tsp of yellow mustard
Salt & pepper to taste

Shred purple cabbage for the bed
Minced parsley - fresh if you have it

Directions

Slice the eggs in half and pop the yolk out into a medium bowl. Add all ingredients and blend until smooth and creamy. Add more mayonnaise if the mixture is too stiff. Fill the eggs with the mixture. Sprinkle with parsley. Keep refrigerated until ready to serve.

Substitutes

  • To lower calories substitute mayonnaise with plain non-fat Greek yogurt.
  • Garnish with Paprika for a more traditional finish.
