Stuffed Grape Leaves

Grape Leaves with The Big Greek Salad will feed a crowd. All the work is done in advance so you can enjoy your guest. The salad can be dressed and at the table. Place several sets salad forks and spoons on each side of the platter so, no one has to wait to eat. Serve with warm pita bread.

Grape Leaves Stuffed with Lentils and Rice

Makes about 30 grape leaves

Ingredients

Filling

1 1-lb jar grape leaves
1 cups brown rice
3/4 cup brown lentils - rinsed
4 chopped carrots
1 medium onion - chopped
3-4 cloves garlic - minced
1 tsp cumin
¾ tsp oregano
1 tsp. salt
1/4 tsp. pepper
1 lemon, sliced

Dressing

1/4 cup lemon juice
Grate from 1 lemon
1/2 cup olive oil

Directions

Place garlic, onion, rice seasonings in a covered pot with 3 cups water. Bring to a boil and cook for 10 minutes. Add lentils and simmer about 30 minutes or until mixer is fully cooked. Place a heaping tablespoon of filling in each grape leaf and roll like a burrito. (link to rolling instructions)  Line an oiled 9x13 glass baking pain with sliced lemons. Place the grape leaves on lemon slices top with dressing.

Bake at 325 degrees for 25-30 minutes.
